Pineapple Upside Down Cake (gluten, dairy, soy and nut free)

We also got to show off some of the delicious things you can create with our mixes! We handed out samples of a perfectly sweet and nostalgic Pineapple Upside Down Cake, made with our Yellow Cake Mix. Everything about this recipe is amazing including that it is gluten-free, soy-free, dairy-free and nut-free!🍍 The longest part about making this cake is waiting for it to bake in the oven and then letting it cool before eating it! Make sure you buy pineapple slices in water. The pineapple in syrup is too sugary for this recipe. Here is how to make this easy delicious cake.
What you need:
- 1 Gluten Free Please Yellow Cake Mix
- from directions on back of mix (1/2 Cup Oil, 1 Cup Pineapple Liquid and 3 Eggs)
- 1 20 oz can Pineapple Slices in Water
- 1 Cup Brown Sugar (packed)
- 4 Tbsp Coconut Oil16 Maraschino Cherries (pitted)
Baking Instructions:
- Preheat oven to 350 degrees.
- Drain pineapple and reserve 1 cup of liquid for cake mix. Lay pineapple slices and cherries on paper towels to dry. Pat to soak up extra moisture.
- Follow directions on the back of Gluten Free Please Yellow Cake Mix. Use reserved pineapple liquid instead of milk. Let batter rest for at least 15 minutes.
- Line 9” X 13” pan with parchment paper. Melt coconut oil in pan and then add brown sugar. Mix until well combined. Spread brown sugar mixture out in bottom of pan. Lay pineapple rings & cherries on top of brown sugar mixture.
- Pour cake batter on top of pineapple and cherries. Bake for 45 to 50 minutes or until done.
- Cool cake for at least 20 minutes and then flip on to serving tray.
