There are many different egg replacement options and Gluten Free Please had a customer asking about what replacements are best for our mixes. Eggs can cause serious reactions for people who are allergic to eggs. The most common reactions are skin inflammation or hives, nasal congestion, and digestive symptoms. Gluten Free Please mixes do not contain eggs, but some of the mixes ask for eggs when making the mixes.
The Experiment
I decided to do an experiment with different egg replacement options. I used the Gluten Free Please Chocolate Cake & Cupcake Mix for the experiment and followed the directions for making cupcakes. I had different cupcake color liners to represent what was used in place of the egg. The white cupcake liner was the traditional cupcake with egg. The green cupcake liner was organic ground flaxseed to replace the egg. The yellow cupcake liner was with unsweetened applesauce instead of the egg. The blue cupcake liner was carbonated water to replace the egg and the purple cupcake liner was water, baking powder and oil mixed together to replace the egg
The Results
At first, I thought the unsweetened applesauce (yellow liner) was going to be the winner, but later the cupcakes separated from the liner. They still tasted very good. The cupcakes with the carbonated water (blue liner) didn’t taste as good and didn’t rise as well. And the water, baking powder, oil combination sank in the middle (purple liner). The cupcake with the organic flaxseed held together well, stayed fluffy and tasted very good. You can see the results in the pictures.
The Recommendation
My recommendation when replacing egg is to use organic ground flaxseed. This was the obvious winner of the experiment. To use ground flaxseed, it needs to be mixed with water first. 1 egg equals 1 tablespoon ground flaxseed meal with 2 ½ tablespoons water. Mix the ground flaxseed and water in a bowl and let sit 10 minutes. The meal and water should be thick. Then use this in place of the egg in the mix.
Final Thoughts
If you decide to use applesauce, it is 1 egg for ¼ cup unsweetened applesauce.
Gluten Free Please’s Chocolate Cake & Cupcake Mix needs 3 eggs. Since it doesn’t rise as high as it does with eggs, I’d recommend either making cupcakes or two 8” or 9” round cake pans, and you will need to bake them a little longer. We did 25 minutes for the cupcakes. I hope this helpful.
