Dairy Free Mini Pumpkin Pies and Dairy Free Whipped Cream
What a wonderful time it was at Plum’s Cooking Company in Sioux Falls demonstrating our gluten-free baking mixes! One of the items was dairy-free mini pumpkin pies with our Pie Crust Mix and dairy-free whipped cream. Many people asked how to make the pies and the dairy-free whip cream. The Pie Crust Mix is also sugar free, which is great for people who are diabetic. And it great for chicken pot pie, but that is for another blog! I am going to share with you the delicious recipe for mini pumpkin pies and whipped cream from the demo! You can split your pie crust in half if you want to make some mini pies and one large pie with no top. For the demo we made all mini pies, and it made about 45 mini pies.

Dairy Free Mini Pumpkin Pies Recipe
What you need:
- Mini Muffin Pans
- 3-inch Flower Shaped Cookie Cutter or similar shape
- 1 Gluten Free Please Pie Crust Mix
- 1 15 oz can of Pumpkin Puree
- 1 Cup Unsweetened Coconut Milk (full fat)
- 3 Eggs
- ¾ Cup Brown Sugar
- ½ tsp Salt
- 1 Tbsp Pumpkin Pie Spice
Baking Instructions:
- Preheat oven to 350 F degrees.
- Oil mini muffin pans. Follow directions on the back of the Gluten Free Please Pie Crust Mix. Roll out the pie dough and use a 3-inch flower shaped cookie cutter to cut pie dough into pieces. I used half the crust at a time and wrapped the other half in plastic wrap. Place one piece in each well of the muffin tin, pressing down lightly to make space for the pumpkin pie filling. Refrigerate the pans while you make the filling.
- Beat the eggs in a large bowl. Add the pumpkin puree, coconut milk, brown sugar, salt, and pumpkin pie spice. Beat or whisk until smooth.
- Fill each well with the pie crust in it to the top with the pumpkin pie filling. Bake in preheated oven for about 45 minutes. Remove from the oven when a knife inserted comes out clean.
- Allow pies to cool on a wire rack for 2 hours. Serve or refrigerate until ready to serve. If you have leftover pumpkin pie filling, you can make a crustless pie(s) in a small, oiled pie plate or oiled ramekins. Serve with dairy-free whipped cream.
Dairy Free Whipped Cream
What you need:
- 1 16 oz Dairy Free Heavy Whipping Cream Alternative (Silk or Country Crock brand preferred), chilled
- ¼ Cup Powdered Cane Sugar
- 2 Tsps. Vanilla Extract
Instructions
- With a hand mixer or stand mixer, whisk all the ingredients together on high until the cream thickens and stiff peaks form.
- Use immediately or can be refrigerated for later. Leftover whipped cream can last several days.
Warning! These pies will be eaten fast! They are so good and make easy finger dessert food, especially for a crowd! The crust held together so well! People couldn’t believe it was gluten-free, soy-free, dairy-free and peanut-free. Even people without food allergies would enjoy these! I now prefer the mini pies over the full the size pies!
