Gluten Free Sourdough Discard Crackers Recipe
Ingredients
- 3/4 Cup (200 grams) discarded active Gluten-Free Sourdough Starter, stirred down
- 2 Tablespoons Butter or Vegan Butter, melted
- 1/4 Teaspoon fine Sea Salt
- 2 teaspoons Dried Herbs (Herbs de Provence works beautifully)
- 1/4 Teaspoon additional Salt for sprinkling on top
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- Melt the butter in a mixing bowl and allow it to cool slightly so it doesn’t cook the starter.
- Add the sourdough discard, dried herbs, and salt into the bowl with the melted butter.
- Mix well until everything is fully combined into a smooth, spreadable mixture.
- Pour the mixture onto your prepared baking sheet and use a spatula to spread it as thin as possible. The thinner you spread it, the crispier your crackers will be.
- Sprinkle lightly with the remaining salt.
- Bake for 20 to 50 minutes, checking every 20 minutes. Bake until the edges and surface are golden brown and crisp.
- Remove from the oven and let cool completely on the pan.
- Once cooled, break into pieces.

Tips for Perfect Crackers
- Spread the batter as thinly as you can (this is the key to crispy crackers).
- Keep an eye on them after the 20-minute mark. Ovens vary and it depends on how thin your batter is.
- Store in an airtight container for several days (if they last that long!)
